CBD Infused Ratatouille

Instructions

  1. Heat 2 tablespoons of the CBD oil in a large, heavy-bottomed pot over medium heat. Add the eggplant cubes and cook, stirring often, until golden brown, about 10 minutes. Transfer the cooked eggplant to a plate and set aside.
  2. In the same pot, heat another 2 tablespoons of CBD oil. Add the zucchini and cook until browned, about 10 minutes. Transfer the cooked zucchini to the plate with the eggplant.
  3. Add the remaining CBD oil to the pot. Stir in the bell peppers and onion, cooking until softened, about 8 minutes. Add the garlic and cook for another minute until fragrant.
  4. Add the tomatoes, basil, thyme, bay leaf, a pinch of sugar, salt, and pepper to the pot. Lower the heat and simmer, uncovered, for 10 minutes until the tomatoes start to break down.
  5. Return the cooked eggplant and zucchini to the pot, mixing well. Cover the pot and simmer over low heat for 30 minutes, stirring occasionally.
  6. Uncover the pot and continue to simmer for about an hour until the excess liquid has evaporated, and the vegetables are very tender, but still holding their shape.
  7. Check the seasoning and add more salt and pepper if needed.
